  • For the cookies:

    • 2 cups all-purpose flour
    • 1/4 cup cocoa powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup unsalted butter, softened
    • 3/4 cup granulated sugar
    • 1 large egg
    • 1 tbsp red food coloring
    • 1 tsp vanilla extract
    • 1 tsp white vinegar
    • 1/4 cup buttermilk (or regular milk)
  • For the filling:

    • 1/2 cup raspberry jam (or your favorite fruit jam)
  • For dusting:

    • Powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
  • Add the egg, red food coloring, vanilla extract, and vinegar, mixing well to combine.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until just combined.
  • Divide the dough into two portions and wrap each in plastic wrap. Refrigerate for at least 30 minutes to firm up.
  • Roll out one portion of dough on a lightly floured surface to about 1/8-inch thickness. Use a round cookie cutter (about 2 inches in diameter) to cut out cookies.
  • Use a smaller cookie cutter (such as a heart or a circle) to cut out the centers of half of the cookies. These will be the “top” cookies with the jam filling.
  • Place the cookies on the prepared baking sheets and bake for 8-10 minutes, or until firm around the edges.
  • Allow the cookies to cool completely on a wire rack.
  • Once the cookies have cooled, spread a layer of raspberry jam on the solid cookies, and top with the cookies that have the center cut out. Press gently to sandwich the jam between the cookies.
  • Dust with powdered sugar before serving.

Notes

  • If you don’t have buttermilk, you can substitute with regular milk.
  • The raspberry jam can be swapped with any other fruit jam, such as strawberry or cherry, depending on your preference.
  • These cookies are best eaten within a few days of baking, but they can be stored in an airtight container for up to a week.
