Description

Smoky, juicy, and bursting with flavor—this Traeger-grilled corn on the cob is brushed with melted butter, garlic, and fresh cilantro, then finished with a sprinkle of salty cotija cheese. It’s a quick and easy summer side dish that steals the show!


Ingredients

  • 5 ears corn, shucked

  • ¼ cup butter, melted

  • 1 tablespoon fresh cilantro, chopped

  • ¼ teaspoon garlic powder

  • ½ teaspoon salt

  • ⅛ teaspoon black pepper

  • 2 tablespoons cotija cheese, crumbled


Instructions

  • Preheat your Traeger grill to 400°F.

  • While the grill is heating, shuck the corn by peeling back and removing the husks.

  • In a small bowl, combine melted butter, chopped cilantro, garlic powder, salt, and pepper.

  • Brush each ear of corn generously with the butter mixture.

  • Place the corn directly on the grill grates.

  • Grill for 12–15 minutes, turning occasionally, until lightly charred and tender.

  • Remove from the grill and sprinkle with cotija cheese.

 

  • Serve hot with extra butter or lime wedges, if desired.

Notes

Easily doubled for cookouts and gatherings.

Add a squeeze of lime for a bright, tangy finish.
