Ingredients

Instructions

Prepare the Dough:
In a large bowl, cream together softened butter and powdered sugar until light and fluffy. Mix in lemon juice and lemon zest. -
Combine Dry Ingredients:
In a separate bowl, whisk together flour, cornstarch, and salt. -
Mix Dough:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. -
Chill:
Wrap dough in plastic wrap and chill in refrigerator for at least 1 hour. -
Preheat Oven:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. -
Shape Cookies:
Roll dough into 1-inch balls and place on baking sheets about 2 inches apart. Flatten each ball slightly with the bottom of a glass or your fingers. -
