8 small thick slices of bread (sourdough or similar sturdy bread works best)

8 square slices of cheddar cheese

5 oz (150 g) cream cheese, softened

1 tablespoon Parmesan cheese

1 tablespoon mayonnaise (optional, see notes)

Butter, as needed for grilling
Instructions

Prepare Spread:
In a small bowl, mix the softened cream cheese, Parmesan cheese, and mayonnaise (if using) until well combined. -
Assemble Sandwiches:
Spread the cream cheese mixture evenly on one side of each bread slice. Layer cheddar slices on top of the cream cheese on 4 bread slices, then top with the remaining bread slices to form sandwiches (cream cheese side in). -
Grill:
Heat a skillet over medium heat. Butter the outside of each sandwich generously. Place sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted.

Serve:
Remove from skillet, slice if desired, and serve immediately.
Notes
Mayonnaise adds extra creaminess and helps the bread brown nicely but can be omitted.
Use your favorite bread, but firmer breads like sourdough or country loaf hold up best.
Add tomato slices or fresh herbs for variation.
