4 ounces sharp cheddar cheese (1 cup shredded)

1 medium jalapeño pepper, seeded and finely chopped

4 slices cooked bacon (optional)

4 slices hearty white, sourdough, or French sandwich bread

2 tablespoons mayonnaise
Instructions

Mix the cream cheese filling: In a small bowl, combine cream cheese, garlic powder, kosher salt, and chopped jalapeño. Mix well.

Assemble the sandwiches: Spread mayonnaise on one side of each bread slice. On the un-mayo side, spread half of the cream cheese mixture on two slices. Top with shredded cheddar and bacon (if using). Top with the remaining bread slices, mayo side up.

Cook the sandwiches: Heat a skillet over medium heat. Place sandwiches in skillet and cook until bread is golden brown and cheese is melted, about 3–4 minutes per side. Press gently with a spatula for even toasting.
