Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 6 cups chicken broth
  • 1 ½ cups cooked chicken (shredded or diced)
  • 1 ½ cups egg noodles (or any pasta of choice)
  • Salt and pepper, to taste

 

  • Fresh parsley for garnish (optional)

Instructions

  • Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.
  • Add the carrots and celery: Stir in the sliced carrots and chopped celery. Cook for another 5 minutes, stirring occasionally.
  • Season and add broth: Add the dried thyme, dried parsley, bay leaf, salt, and pepper to the vegetables. Stir well to combine. Pour in the chicken broth and bring the mixture to a boil.
  • Simmer the soup: Once the broth is boiling, reduce the heat to a simmer and cook for 15 minutes, or until the vegetables are tender.
  • Add chicken and noodles: Stir in the cooked chicken and egg noodles (or other pasta). Simmer for an additional 10-12 minutes, or until the noodles are tender.
  • Finish the soup: Taste and adjust seasoning with additional salt and pepper, if needed. Remove the bay leaf.

 

  • Serve: Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot.

Notes

  • You can use store-bought rotisserie chicken to save time.
  • If you prefer a thicker soup, you can reduce the amount of broth or add more noodles.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
