Description

This Creamy Chicken and Corn Pasta combines tender chicken, sweet roasted corn, smoky bacon, and a rich, velvety cream sauce, all tossed with farfalle pasta and topped with Parmesan cheese. It’s the ultimate comfort food with a delicious balance of savory, creamy, and slightly smoky flavors — perfect for weeknight dinners or casual entertaining!

Pasta & Cheese:

  • 10 oz farfalle (bow-tie) pasta

  • ½ cup Parmesan cheese, grated

Chicken:

  • 1.5 lb chicken thighs or breasts (skinless, boneless)

  • 1.5 teaspoons smoked paprika

  • 1 teaspoon Italian seasoning

  • ¼ teaspoon salt

  • Freshly ground black pepper, to taste

  • 2 tablespoons olive oil

Corn:

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 2 cups corn kernels (cooked from 4 ears of corn)

  • 1 teaspoon smoked paprika

  • 1 teaspoon chili powder

Sauce and Extras:

  • 1 cup heavy cream

  • 8 strips bacon, cooked and crumbled

  • Fresh herbs (thyme, oregano, or marjoram), for garnish


Instructions

  • Cook Pasta:
    Bring a large pot of salted water to a boil. Cook farfalle pasta according to package directions until al dente. Drain and set aside.

  • Prepare Chicken:
    Season chicken with smoked paprika, Italian seasoning, salt, and pepper. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Let rest, then slice into strips.

  • Roast the Corn:
    In a separate skillet, heat 1 tablespoon olive oil. Add corn kernels, smoked paprika, chili powder, salt, and pepper. Sauté for 5–7 minutes until slightly charred and caramelized. Set aside.

  • Make the Sauce:
    In the same pan used for the chicken (wipe excess oil if needed), pour in the heavy cream. Heat gently, stirring until slightly thickened (about 3–4 minutes). Stir in Parmesan cheese until melted and smooth.

  • Combine:
    Add cooked pasta, sliced chicken, corn, and crumbled bacon into the sauce. Toss until everything is evenly coated.

 

  • Serve:
    Plate and garnish with fresh herbs and additional Parmesan if desired. Serve hot!

Notes

Add a pinch of red pepper flakes for extra heat

You can swap heavy cream for half and half for a lighter version.

Fresh corn adds great texture and sweetness, but frozen or canned corn can be substituted in a pinch.

This dish reheats well — store in an airtight container in the fridge for up to 3 days.
