- 1 whole chicken (about 4–5 pounds)
- 1/2 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
- 2 tbsp fresh rosemary, chopped (or 1 tbsp dried)
- 1 tbsp fresh parsley, chopped
- 1 lemon, halved
- 1 onion, quartered
- Salt and pepper, to taste
- 1/2 tsp paprika (optional, for extra color)
- 1/4 cup olive oil
- 1 cup chicken broth (for roasting)
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together the softened butter, minced garlic, thyme, rosemary, parsley, salt, pepper, and paprika (if using).
- Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.
- Gently loosen the skin of the chicken by inserting your fingers between the skin and the meat, being careful not to tear the skin.
- Rub the garlic herb butter mixture generously under the skin and all over the outside of the chicken.
- Stuff the chicken cavity with the halved lemon and quartered onion.
- Drizzle olive oil over the chicken and season with additional salt and pepper.
- Place the chicken on a rack in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist while roasting.
- Roast the chicken for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) when measured at the thickest part of the thigh.
- Halfway through the roasting time, you can baste the chicken with its own juices for extra flavor and crispiness.
- Once the chicken is done, remove it from the oven and let it rest for 10-15 minutes before carving.
