German Potato Pancakes: A Crispy, Savory Delight

Description

These crispy and savory German potato pancakes, known as “Reibekuchen” or “Puffer,” are made with finely grated potatoes and onions, seasoned with salt, pepper, and a touch of nutmeg. Served with applesauce, they make a delicious side dish or snack!


Ingredients

  • 2 pounds potatoes, peeled and finely grated

  • 1 yellow onion, peeled and finely grated

  • 2 eggs

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon ground nutmeg

  • ¼ cup vegetable oil (more as needed)

  • Applesauce (for serving)


Instructions

  • Peel and finely grate the potatoes and onion. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

  • In a large bowl, mix the grated potatoes, onion, eggs, salt, pepper, and nutmeg together until well combined.

  • Heat the vegetable oil in a large skillet over medium heat.

  • For each pancake, drop about 2 tablespoons of the potato mixture into the skillet and flatten it slightly with a spatula.

  • Fry the pancakes for about 3-4 minutes on each side, until golden brown and crispy.

  • Remove from the skillet and drain on paper towels.

 

  • Serve with applesauce on the side.

Notes

  • You can adjust the seasoning to taste with additional salt, pepper, or nutmeg.

 

  • To keep the pancakes crispy, serve them immediately after frying.
