Description
These crispy and savory German potato pancakes, known as “Reibekuchen” or “Puffer,” are made with finely grated potatoes and onions, seasoned with salt, pepper, and a touch of nutmeg. Served with applesauce, they make a delicious side dish or snack!
Ingredients

2 pounds potatoes, peeled and finely grated

1 yellow onion, peeled and finely grated

2 eggs

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon ground nutmeg

¼ cup vegetable oil (more as needed)

Applesauce (for serving)
Instructions

Peel and finely grate the potatoes and onion. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

In a large bowl, mix the grated potatoes, onion, eggs, salt, pepper, and nutmeg together until well combined.

Heat the vegetable oil in a large skillet over medium heat.

For each pancake, drop about 2 tablespoons of the potato mixture into the skillet and flatten it slightly with a spatula.

Fry the pancakes for about 3-4 minutes on each side, until golden brown and crispy.

Remove from the skillet and drain on paper towels.

Serve with applesauce on the side.
Notes

You can adjust the seasoning to taste with additional salt, pepper, or nutmeg.

To keep the pancakes crispy, serve them immediately after frying.
