Ingredients

Scale

Meatloaf:

  • 1 ½ pounds ground beef (80/20 blend)
  • 1 cup fresh cremini mushrooms, finely chopped
  • 2 cloves fresh garlic, minced
  • 1 small onion, finely chopped
  • 1 cup breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • Salt, pepper, and other seasonings to taste

Mushroom Gravy:

  • 1 cup fresh cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

Instructions:

For the Meatloaf:

  1. Prepare the Meat:
Let the ground beef come to room temperature before starting.

  2. Chop the Vegetables:
Finely chop the onions and mushrooms. Mince the garlic.

  3. Mix the Meatloaf:
In a large bowl, combine the ground beef, breadcrumbs, Worcestershire sauce, garlic, onions, mushrooms, and seasonings. Mix gently, being careful not to overwork the meat.

  4. Test the Seasoning:
Take a small patty of the mixture and cook it in a skillet to test the seasoning. Adjust if necessary.

  5. Shape and Bake:
Shape the meatloaf mixture into a loaf shape with a slight dome in the center. Place it in a baking pan. Bake at 350°F (175°C) for about 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

  6. Rest the Meatloaf:
Let the meatloaf rest for 15 minutes before slicing.

For the Mushroom Gravy:

  1. Sauté the Mushrooms:
In a skillet over medium heat, sauté the sliced mushrooms, garlic, and onion until the mushrooms are golden brown and the onions are soft.

  2. Add the Liquid:
Add the beef broth to the skillet and bring to a simmer. Let the gravy simmer for 10-15 minutes, or until it thickens to your desired consistency. Season with salt and pepper to taste.

Notes

Serving Suggestions:

  • Serve with mashed potatoes for a classic comfort meal.
  • Roasted Brussels sprouts also make a great side dish.

Leftovers:

  • Use leftover meatloaf and gravy to make delicious sandwiches.

Additional Tips:

  • Loaf Pan: Use a heavy-bottomed loaf pan to prevent uneven cooking.
  • Resting the Meatloaf: Allow the meatloaf to rest for 15 minutes after baking to lock in moisture.
  • Make-Ahead Gravy: You can make the mushroom gravy up to two days ahead for convenience.
  • Shallow Trench: Create a shallow trench in the middle of the meatloaf before baking to help hold more gravy.
  • Reheating Gravy: When reheating the gravy, add a little more beef broth if it thickens too much.
  • Prep Time: 15 minutes
  • Cook Time: 1 hour (for meatloaf) + 15 minutes (for gravy)
