Description

Sausage Pancake on a Stick is the ultimate fun and portable breakfast treat. A savory sausage link wrapped in a fluffy pancake batter and served on a stick—perfect for a quick breakfast or brunch. Enjoy the combination of sweet and savory flavors in every bite!

Ingredients

Scale
  • 6 breakfast sausage links (pre-cooked or uncooked)
  • 1 ½ cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • 6 wooden skewers or sticks (for serving)
  • Maple syrup (optional, for dipping)

Instructions

  • Prepare the sausages: If using uncooked sausages, cook them in a skillet over medium heat until fully cooked, about 8-10 minutes. Allow them to cool slightly before inserting the sticks.
  • Make the pancake batter: In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, whisk the egg, milk, vanilla extract, and melted butter until smooth. Gradually combine the wet ingredients with the dry ingredients, stirring just until incorporated (don’t overmix).
  • Insert the sticks: Carefully insert a wooden skewer or stick into each sausage link. This will act as your “handle.”
  • Coat the sausages: Dip each sausage link into the pancake batter, coating it completely. Let any excess batter drip off.
  • Cook the pancake-covered sausages: Heat a large skillet or griddle over medium heat. Lightly grease it with a little butter or cooking spray. Place the batter-coated sausages onto the skillet and cook, turning occasionally, until golden brown on all sides, about 4-6 minutes.
  • Serve: Remove the sausage pancake sticks from the skillet. Serve hot with maple syrup for dipping (optional).

Notes

  • You can use any type of breakfast sausage, such as turkey or pork, depending on your preference.
  • Make sure the skillet is heated to the right temperature to avoid the pancakes sticking or cooking unevenly.
  • For extra flavor, consider adding cinnamon or nutmeg to the pancake batter.
