Description

This Creamy Broccoli Salad combines crunchy, fresh broccoli with sweet raisins, crisp red onion, tart apple, and toasted almonds, all coated in a creamy mayonnaise and sour cream dressing. It’s a refreshing and easy-to-make side dish, perfect for potlucks, BBQs, or as a healthy snack!


Ingredients

  • 1 head broccoli, chopped into florets

  • 1/2 cup raisins

  • 1/2 large red onion, sliced thin

  • 1 apple, peeled and chopped

  • 1/4 cup sliced almonds

  • 1/2 cup mayonnaise

  • 1/2 cup sour cream

  • 12 tablespoons sugar (to taste)


Instructions

  • Prepare the ingredients:

    • Chop the broccoli into bite-sized florets. Peel and chop the apple, and thinly slice the red onion.

    • Toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden, stirring occasionally. Set aside to cool.

  • Make the dressing:

    • In a small bowl, whisk together the mayonnaise, sour cream, and sugar until smooth and combined. Adjust the sweetness by adding more sugar if desired.

  • Assemble the salad:

    • In a large bowl, combine the broccoli, raisins, apple, red onion, and toasted almonds.

    • Pour the dressing over the salad and toss everything together until evenly coated.

 

  • Chill and serve:

    • Refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve cold.

Notes

For extra crunch, you can add sunflower seeds or chopped pecans.

You can adjust the sweetness by increasing or decreasing the sugar to suit your taste.

If you want a lighter version, you can use Greek yogurt instead of sour cream and reduce the mayo.
