Ingredients

  • Sweet or Genoese basil (a few sprigs)

  • Purple basil (a few sprigs)

  • 1 shallot, thinly sliced

  • Extra virgin olive oil (to taste)

  • Juice of 1 lemon

  • Sea salt (to taste)

  • Fresh chives (a few stalks)

  • Chive and basil blossoms (optional, for garnish)


Instructions

  1. Slice the heirloom tomatoes into wedges or desired shapes and place them in a large bowl.

  2. Tear the basil leaves into small pieces and add them to the tomatoes.

  3. Thinly slice the shallot and add to the bowl.

  4. In a small bowl, whisk together the extra virgin olive oil and lemon juice. Season with sea salt to taste.

  5. Pour the dressing over the tomato mixture and toss gently to combine.

  6. Chop the fresh chives and sprinkle them over the salad.

  7. Garnish with chive blossoms and basil blossoms, if using.

  8. Serve immediately or refrigerate for a short period to let the flavors meld.

Notes

You can use any variety of tomatoes based on what’s available or in season.

If you prefer a stronger flavor, increase the amount of shallots or basil.
