Detox Moroccan Lentil Soup

Description

A hearty and nourishing soup infused with aromatic Moroccan spices, featuring red lentils, fresh vegetables, and a touch of ginger and turmeric. Perfect for a wholesome detox meal.


Ingredients

  • 1 can (400g) Mutti Polpa finely chopped tomatoes

  • 250g red lentils (hulled)

  • 1 onion, chopped

  • 1 celery stalk, chopped

  • 2 carrots, chopped

  • 1 piece fresh ginger (approximately 1-inch), grated

  • 1 teaspoon turmeric

  • 4 cups water

  • 1 heaping teaspoon coarse salt

  • Chives, chopped (for garnish)

  • Thyme, fresh or dried (for garnish)


Instructions

  • In a large pot, sauté the chopped onion, celery, and carrots over medium heat until softened, about 5-7 minutes.

  • Add the grated ginger and turmeric, stirring for another minute until fragrant.

  • Pour in the Mutti Polpa tomatoes and water, bringing the mixture to a boil.

  • Add the red lentils and coarse salt. Reduce the heat to low and let the soup simmer uncovered for 25-30 minutes, or until the lentils are tender and the soup has thickened.

  • Adjust seasoning with additional salt if needed.

 

  • Serve hot, garnished with chopped chives and a sprinkle of thyme.

Notes

For a richer flavor, you can sauté the ginger and spices in olive oil before adding the vegetables.

This soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
