Description

Ingredients

1 can (400g) Mutti Polpa finely chopped tomatoes

250g red lentils (hulled)

1 onion, chopped

1 celery stalk, chopped

2 carrots, chopped

1 piece fresh ginger (approximately 1-inch), grated

1 teaspoon turmeric

4 cups water

1 heaping teaspoon coarse salt

Chives, chopped (for garnish)

Thyme, fresh or dried (for garnish)
Instructions

In a large pot, sauté the chopped onion, celery, and carrots over medium heat until softened, about 5-7 minutes.

Add the grated ginger and turmeric, stirring for another minute until fragrant.

Pour in the Mutti Polpa tomatoes and water, bringing the mixture to a boil.

Add the red lentils and coarse salt. Reduce the heat to low and let the soup simmer uncovered for 25-30 minutes, or until the lentils are tender and the soup has thickened.

Adjust seasoning with additional salt if needed.

Serve hot, garnished with chopped chives and a sprinkle of thyme.
Notes
For a richer flavor, you can sauté the ginger and spices in olive oil before adding the vegetables.
This soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
