Ingredients

  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard (optional for extra flavor)
  • 1 teaspoon honey or maple syrup (optional, for sweetness)
  • Salt and pepper, to taste
  • 1 small garlic clove, minced (optional)

 

  • 1 teaspoon fresh herbs (optional: thyme, oregano, or parsley)

Instructions

  • In a small bowl, whisk together the lemon juice, mustard, honey (if using), salt, and pepper until the ingredients are well combined.
  • Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  • (Optional) Add the minced garlic and fresh herbs, then whisk again to combine.
  • Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice for your preference.

 

  • Serve immediately over salads, or store in an airtight container in the fridge for up to 1 week.

Notes

  • If you prefer a thicker dressing, you can increase the mustard or add a tablespoon of Greek yogurt.
  • For a stronger lemon flavor, you can add a teaspoon of lemon zest.
