Ingredients

- 1 teaspoon honey or maple syrup (optional, for sweetness)
- Salt and pepper, to taste
- 1 small garlic clove, minced (optional)
- 1 teaspoon fresh herbs (optional: thyme, oregano, or parsley)
Instructions
- In a small bowl, whisk together the lemon juice, mustard, honey (if using), salt, and pepper until the ingredients are well combined.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
- (Optional) Add the minced garlic and fresh herbs, then whisk again to combine.
- Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice for your preference.
- Serve immediately over salads, or store in an airtight container in the fridge for up to 1 week.
Notes
- If you prefer a thicker dressing, you can increase the mustard or add a tablespoon of Greek yogurt.
