This Creamy Tortellini Soup is a comforting and hearty meal, perfect for a cozy dinner. Packed with flavorful Italian sausage, tender three-cheese tortellini, fresh kale, and a rich creamy base, it’s the kind of soup that warms you from the inside out. Topped with fresh basil and a Parmesan rind for extra flavor, it’s a must-try!


Ingredients

  • 1 pound Italian sausage, casing removed

  • 3 cloves garlic, minced

  • 1 medium sweet onion, diced

  • 2 teaspoons Italian seasoning

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tablespoons all-purpose flour

  • 4 cups chicken stock

  • 1 (8-ounce) can tomato sauce

  • 1 (3-inch) Parmesan rind, optional

  • 1 (9-ounce) package refrigerated three cheese tortellini

  • ½ bunch kale, stems removed and leaves chopped

  • ⅓ cup heavy cream

  • 3 tablespoons chopped fresh basil


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.

  • Add the minced garlic and diced onion, cooking until the onion is softened, about 5 minutes.

  • Stir in the Italian seasoning, salt, and pepper.

  • Sprinkle in the flour and cook for 1-2 minutes to form a roux.

  • Slowly whisk in the chicken stock and tomato sauce, making sure there are no lumps.

  • Add the Parmesan rind (if using) and bring to a simmer. Let it cook for 5-7 minutes to thicken slightly.

  • Stir in the tortellini and kale, cooking until the tortellini is tender, about 5 minutes.

  • Reduce the heat and stir in the heavy cream. Simmer for another 2 minutes.

  • Taste and adjust seasoning as needed, then remove the Parmesan rind.

 

  • Serve the soup hot, garnished with fresh basil.

Notes

For a lighter version, you can substitute turkey sausage for Italian sausage.

The Parmesan rind adds a wonderful depth of flavor, but it’s optional.

Add more heavy cream if you prefer a creamier soup.
